Tomato's Health Boost

This morning I had a simple breakfast of scrambled eggs with sliced mushrooms, just a bit of salt, and of course, a medium-sized tomato sliced to meld w/ the other key ingredients. Not only is it rich in the antioxidant lycopene that gives 🍅 its bright red hue and helps protect against cellular damage -- it's also laden with potassium & folate. All these nutrients aid me in combating inflammation and lowering my LDL (bad) cholesterol, which I've accumulated in the past few years (I guess from constantly eating at fastfood restaus) as shown by my most recent annual medical exam result. There are many wonderful and flavorful ways to add tomato to our diet. Apart from the most obvious ones ~ as part of simple day-to-day meal plans, like my occasional talbos leaves w/ onion; or mechado, afritada, and pastas, tomato (lots of it) can be added to soup, too. I stumbled into the Facebook page "Cooking with Carter" (in photo) featuring a perky young boy from Weymouth, England who usually starts his posts with the line, "Today, I'm gonna make..." And so there he was, slicing 🍅🍅🍅 and bell peppers to make soup 🍲 that will suit his taste. The last touch: cream to add a savory taste. Pretty interesting!
