Ginisang Monggo with Malunggay (Meatless Version)

Ingredients: • 1/2 cup dried mung beans (monggo) • 1 tablespoon cooking oil • 4 cloves garlic, minced • 1 small onion, chopped • 2 medium tomatoes, chopped • 1 tablespoon fish sauce or salt (you can skip fish sauce for a fully meatless version) • 3 cups water • 1 cup malunggay leaves • 1/2 cup squash (optional, for added nutrition and sweetness) • Salt and pepper to taste ⸻ Step-by-step: Step 1: Cook the monggo Wash the mung beans. In a pot, add monggo and 3 cups water. Bring to a boil, then simmer for 20–25 minutes until soft. Step 2: Sauté the base In another pan, heat 1 tablespoon oil. Add garlic, onion, and tomatoes. Cook until the tomatoes are soft and slightly mashed. Step 3: Combine Add the sautéed mixture into the cooked monggo. Stir well. Step 4: Add vegetables Add squash if using. Simmer for 5–10 minutes until tender. Step 5: Season Add fish sauce or salt and pepper to taste. Step 6: Add malunggay Add malunggay leaves. Cook for 1–2 minutes. Step 7: Serve Serve hot with rice.
