Sinigang na Baboy with Gabi: A Comforting Filipino Pork Soup Sinigang na baboy with gabi is a delightful Filipino pork soup featuring taro, all simmered in a tangy broth. It holds a special place in my heart as my comfort food, and it was one of the first dishes I attempted to make when I began learning to cook. What’s not to love about pork sinigang or the dish in general? I grew up savoring its many versions and continue to enjoy it to this day. There’s something about this quintessential Filipino dish that makes it a favorite for many to prepare repeatedly. Personally, I cherish the feeling that envelops me when sipping the hot, sour broth. It brings a sense of comfort and warmth during chilly weather, yet oddly enough, it also provides a refreshing sensation on warm summer days. As a child, my mom would make sinigang for us on weekends, often accompanied by chicken adobo. This specific recipe features pork belly as the primary protein. Additionally, I incorporate daikon radish, snake beans (sitaw), ong choy (Chinese kangkong), and long green chili peppers (siling pangsigang). To begin cooking sinigang, start by boiling onions and tomatoes to infuse flavor into the broth. Use a wide, deep cooking pot filled with boiling water, then add these ingredients. Next, introduce the pork belly into the pot and cook for 25 to 30 minutes over low to medium heat. After that, add the taro and continue boiling on medium heat for another 20 to 30 minutes, or until the pork becomes tender. I particularly enjoy when the gabi or taro melts into the soup, creating a thick, rich consistency. It’s my go-to ingredient for this dish. For extra flavor, I also include fish sauce and ground black pepper at this stage. Once the radish is added, let it cook for five minutes before incorporating all the remaining vegetables. My fiancé has a penchant for super sour sinigang, and for me, enjoying this dish always brings a cozy and toasty feeling.
